1. Reasonable kitchen layout design

  • 1.1 The kitchen layout design should meet the needs of the established dishes.

The sound insulation, heat insulation, and odor isolation can be effectively solved by setting up double-door spring doors, food screens, corner entrances, etc., and it can also prevent diners from seeing through the kitchen. Reasonable design of exhaust volume can absorb a large amount of heat and oil smoke generated by the kitchen stove in time, ensure air circulation in the kitchen without feeling stuffy, and provide the chef with a comfortable working environment.

3.The kitchen and stove should be ventilated and exhausted.

The ventilation and exhaust system in the kitchen includes exhaust hoods, exhaust fans, exhaust ducts, fresh air ducts and air conditioning systems. Effective ventilation and exhaust must meet the following standards:

The air supply volume of the hot processing room in the kitchen and food preparation room should be about 70% of the exhaust volume, and the negative pressure of the room should not be greater than 5 Pa, so that the fumes and odors generated in the kitchen will not drift to the restaurant, so as to achieve the effect of heat insulation and odor isolation.

4.The kitchen should be equipped with smoke alarms, sprinklers, gas alarms and carbon dioxide fire extinguishers.

There are many fire hazards in the kitchen, such as gas (oil) leakage in the room, high temperature generated by the stove, oil accumulated in the hood for a long time, etc. If it is not well managed or not paid attention to maintenance and inspection, it will cause a fire. Therefore, in addition to strengthening the fire safety awareness of employees and preventing fires before they happen, the kitchen must also be equipped with necessary fire-fighting facilities, such as smoke alarms, sprinklers, carbon dioxide fire extinguishers, etc. For units that use gas, gas leak alarms should also be installed in the kitchen.
